What's in Season: Farm-Fresh Delights

Our farm thrives on diversity, cultivating a wide array of fruits, vegetables, and herbs. Each season brings its own harvest, ensuring a continuous supply of fresh, nutritious options for our community. Currently, we are cultivating plantains, papayas, pumpkins, coconuts, ornamental plants, palms, and trees. Additionally, we are raising chickens and sheep as part of our diverse agricultural system, ensuring a balanced and resilient farm.


The journey from our fields to your plate is a short one. Our on-site restaurants and markets are supplied directly by our organic farm, guaranteeing that the food you enjoy is as fresh and flavorful as possible. This farm-to-table approach not only supports sustainable agriculture but also allows our chefs to craft menus that highlight the best of each season's offerings.

Meet Our Farm Visionaries

Ingrid Rivas

Leading our agricultural endeavors is Ingrid Rivas, an agronomist with over 35 years of experience. Her dedication to sustainable farming, biodiversity, and soil regeneration has helped shape Moncayo Farm into a thriving, resilient ecosystem.

Radames Arroyo

Alongside her is Radames Arroyo, a civil engineer specializing in structures, hydrology, and surveying. His expertise in construction and farm-related projects has been instrumental in designing efficient, sustainable infrastructure on the farm.

Together, Ingrid and Radames have worked on transforming the land at Moncayo Farm. Initially focusing on monoculture, they quickly realized the necessity of biodiversity after facing a complete crop loss. This experience led them to embrace regenerative agriculture, improving drainage by working with the land’s natural contours, creating ditches, and enhancing growing areas.
